Today’s gooey chocolate brownie bite recipe is brought to you by Rose.
Rose is 10 years old and has been baking with her older sisters since she was 5. Believe it or not, this kid has been baking at least once a week for the last 3 years! Every one of her recipes is made from scratch, and a great deal of her inspiration comes from YouTube. She’s learned a lot by watching Nerdy Nummies, How To Cake It, My Cupcake Addiction and How To Cook That. The following recipe is a family favorite because it’s quick, there is minimal clean-up and its delicious. It’s one of my personal favorites, because there’s a coffee kick in every bite!
1 cup and 2 tablespoons of sugar
1/2 cup of flour
1/3 cup of unsweetened cocoa powder
2 tablespoons of instant coffee
1/4 teaspoon of salt
1/2 cup of vegetable oil
1/3 cup of whole milk
1 teaspoon of vanilla extract
1 large egg
- Pre-heat the oven to 350 degrees
2. Combine the oil, milk, vanilla extract and egg in a large bowl
3. Combine the rest of the ingredients in a separate bowl
4. Slowly mix the wet ingredients in with the dry ingredients
5. Pour batter onto a mini muffin tin, to help them bake quickly
6. Bake for 20 minutes
After they’ve cooled for a few minutes, we like to add dark chocolate chips right on top. Since they are still a little warm the chocolate chips will melt lightly.
